Wild Pickled Garlic

Ingredients:

wild garlic

1 part water

1 part vinegar

½ teaspoon of Alum (sieved)

Directions:

Wash your peeled garlic, cutting off the green tips. Add the garlic to mason jar. Add to jar half a teaspoon of Alum. Add vinegar and water. Seal the jar and allow it to stay in a cool environment for about 3 weeks. You can serve this wild pickled garlic with meals.

Pickled Cauliflower

Ingredients:

1 teaspoon of mustard seeds

1 teaspoon of coriander seeds

½ teaspoon of cumin seeds

2 cups of cider vinegar

3-1/4 inch slices of peeled ginger, fresh

5 medium garlic cloves, peeled and smashed

1 small red pepper, cored and seeded, cut into strips

4 medium carrots, peeled, sliced, into lengthwise 4-inch pieces

One small head of cauliflower, cut into ½ inch florets

¼ teaspoon of red pepper flakes

½ teaspoon of ground turmeric

1 teaspoon of black peppercorns

2 tablespoons of kosher salt

½ cup of granulated white sugar

½ a small sweet onion, peeled, thinly sliced
